Thanksgiving is my favorite of the major holidays. I love it because it’s so simple, despite what the retail world has been implementing with the craziness of the shopping that follows it. Our tomato plants (should I say, trees?) are absolutely loaded with tomatoes this year. We put in (4) plants each of Brandywines, and heirloom roma-style and chocolate cherry. But I have to confess – I have never been much of a tomato-eater. I’ve seen lots of recipes lately for stuffed tomatoes which got my mind going. While I usually don’t enjoy the taste of tomatoes other than homegrown, I figured I could come up with something that would satisfy my craving.
