Smoky Beets

Smoky, sweet, earthy… these beets are delicious and easy to cook up on the grill, or roasted in your favorite cast iron pan! They make an excellent addition to any meal, or a tasty snack. I love them dipped in a nice, quality mustard!

They have such a rich and satisfying taste, we even add them our “bar food” nights!

The trick to these is to be fearless, and really let them char. Don’t be worried about overdoing it, you really want them to get crispy and dark. That’s when the flavors really develop! There’s nothing like that sweet beet flavor, covered in smoky, salty, charred goodness!


2 medium beets, peeled and cut into approx. 1″ cubes

1/2 tablespoons liquid smoke

1 teaspoon fresh lime juice

2 teaspoons garlic powder

1/2 to 1 tablespoon fresh cracked black pepper (depending on preference)

Salt, to taste

Mustard or dipping condiment of choice


  1. Prepare your beets. Whisk together remaking ingredients in large bowl, and add beets. Coat well.
  2. Over high heat, add beets to a cast iron skillet, or a grill basket, depending on your chosen cooking method. Allow beets to sear on all sides, about 5-7 minutes.
  3. Reduce heat to medium-low, and allow to continue to darken and cook through, approximately another 10 minutes.
  4. Remove from pan or grill, sprinkle lightly with salt, serve immediately!
