Cooking Basics: Egg Noodles Recipe

Making your own pasta is so simple, really doesn’t take a lot of a time, and delivers a high-quality product that will blow away any pasta you can purchase off your grocery shelves.

It’s a simple, basic recipe that is worth keeping in your recipe book and honestly, after a time or two of making it, you’ll probably have it memorized!

(1) cup all-purpose flour
(2) fresh eggs
(1) tsp. salt

1) Whisk eggs together in a separate bowl. I know a lot of other pasta recipes tell you to crack the eggs right into the flour, but I like to whisk separately. It seems to mix together better and is easier for me to manage. I will never be the woman who can make pasta dough right on the counter top!

2) In another bowl, combine salt and flour. Create a well in the center of the flour, and pour in the whisked eggs.
3) Mix together thoroughly. You can usually use a spatula to fold the flour into the center and mix the dough while it is still very stick. Once it starts to get drier, I use my hands to mix thoroughly.

4) Once it is mixed well, roll into a ball, cover in a damp towel and let sit for at least a 1/2 hour before kneading and rolling out.

5) Continue as you normally would to roll out, cut and dry your pasta!
