This is an excellent side dish that I came up with for one of our dinners last week. It was extremely easy and so delicious – definitely a new favorite!
1 Cup of Barley (soaked for 1/2 hour in water)
1/4 Cup of shaved Parmesan Cheese
1/4 Cup chopped fresh Kale
10 to 12 Cherry Tomatoes, quartered (you can use grape tomatoes too)
Salt & Pepper to taste
1) Drain & rinse Barley, bring to a boil then cover and simmer for about 1/2 hour.
2) When the barley has absorbed all the water, turn on low and mix in the tomatoes, kale and parmesan. Stir gently until kale is bright green, slightly wilted and parmsean cheese is melted.
3) Season with salt & pepper to taste, and serve!
